Southern Banana Pudding

1   cup of sugar
 
6   tbsp of flour
 
2   tbsp of cornstarch
 
1/2   tsp of salt
 
3   cups of milk
 
6   beaten egg yolks
 
2   tbsp of butter
 
2   tsp of vanilla flavoring
 
4   peeled and sliced bananas
 
1 box of vanilla wafers
 
 
Combine sugar, flour, cornstarch and salt in a double boiler. Mix with a wooden spoon over rapidly boiling water. Gradually blend in milk, then yolks, and butter. Cook until thick and smooth, around 7 minutes. Scrape the sides and bottom frequently, or else you'll have lumpy pudding. Once it thickens, remove from the heat. Add vanilla flavoring. Stir until blended.

While the pudding is still hot, spread a layer of pudding in a 2 quart casserole dish. Next, add a layer of wafers and bananas, then pudding. Top with wafers. For a festive look, garnish with whole strawberries. Refrigerate.
